How to make rice salad, the preparation
- Put the water to boil
- As soon as the water boils, pour in the rice and add the salt: the amount of rice to be cooked varies according to the number of people, however, about a pound per person is sufficient
- When the rice is ready, drain the rice and let it cool in a fairly large bowl at room temperature
- After about half an hour, proceed with the dressing
- Wash the tomatoes, cut into small pieces and pour into the bowl with the rice
- Peel the cucumbers, cut into small pieces and pour into the bowl
- Wash, pitted, chop the olives and pour into the bowl
- Pour the sausage cut into small pieces, the corn, a handful of raisins and pine nuts and mix
- Finally pour the tuna, add more oil, sprinkle a little lemon, being careful to recover the stones that fall inside, then mix everything well
- Put everything in the refrigerator and leave for at least 2 hours
- Take out at least 10 minutes before serving, giving a good stir.
How to make rice salad, useful tips
- Choose rice that cooks well and allows you to keep the grains well separated: the various types of rice recommended are "fine" ones (for example Ribe, Veneria, S. Andrea), but also the arborio gives excellent results
- Cook the rice in abundant salted water, keeping it al dente (maximum 15 minutes)
- After draining the rice, pass it under cold water to stop cooking, then drain again
