Large companies prepare themeatless cutletsstarting from the processing of vegetables that are assembled together (compacted) through the use of vegetable proteins and the addition of a small amount of water. The mixture thus obtained is heated under high pressure conditions and then undergoes a rapid thermal drop. In this motion, the steam produced is able to favor the aggregation of the various ingredients that make up the pulp. This process is necessary to obtain a crunchy and meat-like product. The ingredients used are all of vegetable origin, in particular, it would be flours derived from lupins, peas, oats and soy. These ingredients would not undergo the aggregation process (which requires a lot of energy) described above, but would be integrated with each other by means of a particular food boiling.
